Meet the Pork Chop Calabrese, a dish that’s quickly become one of our most popular entrées. Thick-cut, juicy, and pan-seared to perfection, this pork chop brings the heat — or the sweet — depending on how you like it.
What Is Calabrese Style?
The word “Calabrese” refers to Calabria, a region in Southern Italy known for its assertive flavors, spicy peppers, and rustic cooking methods. Calabrian cuisine makes use of preserved vegetables, bold seasonings, and pork in many forms. This dish honors those roots, combining the richness of seared pork with the punch of peppers and the balance of sweet and savory accompaniments.
Our Technique at The Gallery
We start with a thick-cut, bone-in pork chop — seasoned and grilled to lock in its natural juices. The base of the dish features our signature Calabrese-style potatoes: house-cut thick chips fried until golden, then tossed with sautéed onions and peppers for both texture and heat.
Guests can customize the experience by choosing one of three flavor profiles:
Sweet: Mild sautéed peppers and caramelized onions bring out the pork’s richness.
Hot: Calabrian chili-style heat for those who like it spicy.
Sweet & Hot: A balanced combination that plays sweet and heat off one another.
Finally, we finish the dish with a generous drizzle of high-quality extra virgin olive oil — the kind that adds depth and smoothness without overpowering.
